Gingerbread Bars with Cream Cheese Frosting

I just served the last batch of these gingerbread bars of another tea I had…they are the BEST…so pretty…and so tasty. The recipe is a keeper for me.  Chewy, perfectly spiced Gingerbread Bars meet sweet, luscious Cream Cheese Frosting and it is a match meant to be! These are one of the best holiday bars and once you try them you’ll want to make them every Christmas season!  These bars are a nice meet in the middle kind of gingerbread. They aren’t overly spiced, more of a mellow yet still deliciously gingery bar. So kids and adults alike will love them. Sometimes when I make gingerbread with a lot of ginger or molasses it can be a little too strong for my kids but these are perfect. It still had enough ginger and molasses in them that I loved them and it wasn’t too much for my kids because they loved them just as much. Tiramisu Cupcakes

I made these cupcakes today and they were a huge hit! I made them exactly as the recipe instructed and they were perfect. So moist and just like eating individual tiramisu! They were adored by all! One of the girls requested them for her birthday. Best cake I’ve ever made! These Tiramisu Cupcakes are the jam! They are like little individual tiramisu cakes. They drizzled with an espresso Kahlua mixture, filled with tiramisu filling and topped with a light Kahlua mascarpone buttercream. It’s my new favorite, for sure! These cupcakes rock. I made these today and was wondering the same thing. I ended up with about 15 out of the recipe as written. They taste pretty good too. These easy no bake peanut butter balls are the ticket to a sweet no bake treat for the whole family. I’ve always loved these peanut butter balls! I’m making them for a holiday cookie exchange! Peanut butter balls are a fun treat. I love the idea of dipping them into chocolate! I just love these classic peanut butter balls with the holiday decorations! Yummy and festive! The traditional way to do buckeye balls is to dip them in semisweet chocolate. Just made the gingerbread – best ever ever – better than any Grandmother, etc. and served my pears poached in red wine – oh what fun!  I wound up dividing my batch between two 8″ x 4″ loaf pans and baked for 35 minutes, which seems to be perfect. This recipe is very moist and a wonderful consistency. I wound up doing a light dusting of powdered sugar as well as drizzling the icing over the top…I felt like the gingerbread needed a little extra kick of sweetness. Great recipe! It tastes as good as it looks! I will be adding it to my Christmas baking list. Christmas Crack

I have been making “Christmas Crack” for years. My family loves it and I’m not allowed to make it unless there’s a crowd coming over otherwise we will eat it all!  I have a few shortcuts I have mastered. One year I decided to see what would happen if I “cooked” the butter and sugar in the microwave with good success. I’ve been doing it that way ever since. It just requires a few minutes more baking in the oven. Also, I don’t pre-melt the chocolate any longer. I sprinkle a 12 ounce bag of semi sweet morsels on the top of the cooked crackers and leave them for a few minutes.  The heat from the crackers melts the chocolate and soon it’s easily spreadable. I then top it with chopped nuts; pecans, walnuts, almonds or a combination. I DO line the pan with foil and I cool the pan in the refrigerator or even the freezer and crack it when it is solid.
